How to Make Classic Chicken and Potato Stew

Chicken and potato stew is a comforting, one-pot dish perfect for chilly days. Here’s a simple yet delicious recipe to guide you.

Ingredients: 500g chicken (cut into 2-inch pieces), 4 potatoes (peeled and cubed), 1 onion (chopped), 3 garlic cloves (minced), 1 carrot (sliced), 500ml chicken broth, 2 tbsp olive oil, 1 tsp dried thyme, salt, and pepper to taste. Optional: 1 bay leaf for extra flavor.

Steps:

1. Prep the ingredients: Pat the chicken dry and season with salt, pepper, and half the thyme. Cube potatoes and soak in cold water to prevent browning; drain before use.

2. Sear the chicken: Heat olive oil in a large pot over medium-high heat. Add chicken and cook until golden brown (5-7 minutes per side). Remove and set aside.

3. Sauté aromatics: In the same pot, add onion, garlic, and carrot. Cook until soft (3-4 minutes). Stir in the remaining thyme and bay leaf if using.
