Spicy shredded pork (鱼香肉丝, Yuxiang Rousi) is a beloved Chinese dish known for its perfect balance of sweet, sour, and spicy flavors. Here’s a simple yet authentic recipe to recreate this classic at home.

Ingredients:

- 200g pork loin, thinly sliced and marinated in 1 tbsp soy sauce, 1 tsp cornstarch, and 1 tbsp rice wine for 15 minutes.

- 50g wood ear mushrooms, soaked and shredded; 50g bamboo shoots, shredded.

- Sauce: 2 tbsp soy sauce, 1 tbsp vinegar, 1 tbsp sugar, 1 tsp chili paste, 1 cup water, and 1 tsp cornstarch mixed well.

- Aromatics: 3 garlic cloves, minced; 1 ginger knob, minced; 2 green onions, chopped.

Instructions:

1. Stir-fry pork: Heat 2 tbsp oil in a wok over high heat. Add pork and stir-fry until golden. Remove and set aside.
