Rice flower dumplings, or shaomai, are a beloved dim sum classic known for their sweet, savory filling and translucent wrapper. Here’s a simple guide to making them at home.

Ingredients:

- 200g glutinous rice (soaked for 4 hours, then steamed until tender)

- 100g ground pork (or chicken for a lighter version)

- 5 dried shiitake mushrooms (rehydrated and finely chopped)

- 2 bamboo shoots (julienned)

- 1 tbsp soy sauce, 1 tsp sesame oil, ½ tsp white pepper

- 10-12 dumpling wrappers (store-bought or homemade wheat-based)

- 1 carrot (for garnish, finely shredded)

Steps:

1. Prepare the filling: Sauté mushrooms and bamboo shoots until fragrant. Add ground pork, cook until browned. Mix in steamed rice, soy sauce, sesame oil, and white pepper. Let cool.
