Ingredients:

- 2 large eggs

- 200ml warm water (or broth for richer taste)

- ½ tsp salt

- 1 tsp sesame oil

- Optional: chopped green onions, shrimp, minced pork, or mushrooms.

Steps:

1. Prepare the eggs: Crack eggs into a bowl, add salt, and whisk lightly until just combined (avoid over-beating to keep the custard smooth).

2. Add water: Gradually pour in warm water while continuing to stir gently. Strain the mixture through a fine-mesh sieve to remove any bubbles or egg solids, ensuring a silky result.
