How to Make Bitter Melon with Pork: A Simple Guide

Bitter melon with pork is a healthy and flavorful dish loved for its unique balance of bitter and savory flavors. Here’s a step-by-step guide to making it at home.

Ingredients: 1 fresh bitter melon, 150g pork loin, 2 garlic cloves, 1 tbsp soy sauce, 1 tsp oyster sauce, 1/2 tsp sugar, salt, and cooking oil.

Steps:

1. Prep the bitter melon: Wash it, slice lengthwise, scoop out seeds, and cut into thin half-moons. Soak in salted water for 10 minutes to reduce bitterness, then rinse and drain.

2. Marinate the pork: Slice pork thinly. Mix with 1 tsp soy sauce, a pinch of salt, and 1 tsp cornstarch; let sit for 15 minutes.

3. Stir-fry: Heat oil in a wok over medium-high heat. Stir-fry garlic until fragrant, then add pork and cook until no longer pink. Remove pork and set aside.

4. Cook bitter melon: Add more oil if needed. Sauté bitter melon for 3-4 minutes until slightly softened. Return pork to the wok.

5. Season: Add 1 tbsp soy sauce, 1 tsp oyster sauce, and 1/2 tsp sugar. Stir-fry for 1-2 minutes until everything is well-coated. Adjust salt to taste.

Serve hot with steamed rice. The dish is tender, savory, and perfectly balanced, making bitterness enjoyable!
