How to Make Strawberry Daifuku: A Step-by-Step Guide

Strawberry daifuku, a beloved Japanese wagashi, combines chewy mochi with sweet strawberries and creamy filling. Here’s a simple recipe to recreate this treat at home.

Ingredients:

- 200g glutinous rice flour (mochiko)

- 50g sugar

- 200ml water

- Cornstarch (for dusting)

- 4-6 fresh strawberries (hulled and leaves left on)

- 100g white bean paste (anko) or cream cheese

Steps:

1. Prepare the mochi dough: Mix mochiko and sugar in a bowl. Gradually add water, stirring until smooth. Pour into a microwave-safe bowl and microwave on high for 90 seconds. Stir quickly, then microwave for another 90 seconds. Knead the dough until smooth and elastic.

2. Shape the dough: Dust hands with cornstarch. Divide the dough into 6 equal portions. Flatten each into a circle, leaving a thicker center.

3. Fill the strawberries: Place a strawberry in the center of each dough circle. Add a spoonful of anko or cream cheese on top.

4. Enclose the filling: Gently wrap the dough around the strawberry, pinching to seal. Avoid tearing the dough.

5. Serve: Roll in cornstarch to prevent sticking. Best enjoyed fresh or chilled.
