How to Make Crispy Ice Flower Potstickers

Ice flower potstickers, named for their delicate, frost-like crust, are a beloved street food snack. Here’s a simple guide to making them at home.

Ingredients:

- 20 dumpling wrappers (store-bought or homemade)

- 200g ground pork (or chicken/veggies)

- 1 tbsp soy sauce, ½ tsp sesame oil, 1 pinch white pepper

- ½ cup water + 2 tbsp flour (for ice flower batter)

Steps:

1. Prepare filling: Mix ground pork with soy sauce, sesame oil, and white pepper. Stir until sticky.

2. Assemble dumplings: Place 1 tsp filling in each wrapper. Fold and seal edges tightly, pleating if desired.

3. Make ice flower batter: In a bowl, whisk water and flour until smooth. The batter should be thin, like milk.

4. Cook: Heat 2 tbsp oil in a non-stick pan over medium heat. Arrange dumplings in a single layer. Fry for 2 minutes until bottoms turn golden.

5. Steam and crisp: Carefully pour the batter into the pan (it should sizzle). Cover immediately and cook for 8-10 minutes until the batter sets into a crispy, lacy "ice flower."

6. Serve: Uncover, let cool for 1 minute, then flip onto a plate. Serve with soy-vinegar dipping sauce.

Tips: For extra crispiness, use high-heat oil and avoid overcrowding the pan. Enjoy the perfect combo of tender filling and crunchy, frosty crust!
