How to Make Purple Yam Pastries: A Simple Guide

Purple yam pastries, with their vibrant color and sweet, nutty flavor, are a delightful treat. Here’s a basic recipe to guide you.

First, prepare the dough. Mix 200g of all-purpose flour, 50g of sugar, and a pinch of salt. Rub in 100g of cold diced butter until the mixture resembles breadcrumbs. Gradually add 60ml of ice water, knead lightly into a smooth dough, and refrigerate for 30 minutes.

Next, make the filling. Peel and steam 300g of purple yams until soft, then mash them. Mix with 50g of sugar, 20g of melted butter, and a dash of vanilla extract until smooth. Let it cool.

Roll the chilled dough into a thin sheet, cut into circles, and place a spoonful of filling in the center. Fold the edges to seal, forming a semi-circle or round shape. Brush with egg wash and sprinkle with sesame seeds.

Bake at 180°C (350°F) for 20–25 minutes until golden. Let them cool slightly before enjoying. These pastries are best served warm with a cup of tea.

Experiment with adding coconut flakes or nuts to the filling for extra texture!
