How to Make Crispy Candied Peanuts

Candied peanuts, or "guashuang huasheng" in Chinese, are a beloved crunchy snack with a sweet, melt-in-your-mouth texture. Here’s a simple guide to making them at home.

Ingredients:

- 200g raw peanuts

- 100g granulated sugar

- 50ml water

- 1 tsp white vinegar (optional, for crispiness)

- A pinch of salt

Steps:

1. Preheat the oven to 160°C (320°F). Spread peanuts on a baking tray and roast for 10–12 minutes until golden. Let cool slightly.

2. Make the syrup: In a non-stick pan, mix sugar, water, and vinegar. Heat over medium-low, stirring until the sugar dissolves.

3. Cook the syrup: Once boiling, stop stirring and let it bubble for 3–5 minutes until thickened and slightly sticky.

4. Add peanuts: Toss the roasted peanuts into the syrup, coating them evenly. Cook for 1–2 minutes until the sugar crystallizes.

5. Cool and dry: Transfer peanuts to a parchment-lined tray, separate them with forks, and let cool completely. They will harden as they cool.

Tips:

- Use raw, shelled peanuts for best results.

- Work quickly when coating peanuts to avoid clumping.

- Add a pinch of salt to balance the sweetness.
