Start by gathering ingredients: 500g chicken thighs (cut into pieces), 2 onions (chopped), 3 garlic cloves (minced), 1 tbsp ginger (grated), 2 potatoes (diced), 1 carrot (sliced), and 2 tbsp curry powder. For the sauce, you’ll need 400ml coconut milk, 200ml chicken broth, 1 tbsp soy sauce, 1 tsp sugar, and salt to taste.

Heat 2 tbsp oil in a large pot over medium heat. Sauté onions until golden, then add garlic, ginger, and curry powder. Stir for 1 minute until fragrant. Add the chicken pieces and cook until browned on all sides. Toss in potatoes and carrots, mixing well. Pour in coconut milk and chicken broth, then bring to a simmer.
