How to Steam Turbot: A Simple Guide

Steaming turbot, a delicate and flavorful white fish, is a healthy and popular cooking method that preserves its natural taste. Here’s a step-by-step guide to prepare a perfect steamed turbot.

First, select a fresh turbot (about 1-1.5 lbs) with clear eyes and firm flesh. Rinse it under cold water and pat dry with paper towels. Make three diagonal slashes on both sides to help heat penetrate and enhance flavor absorption.

Next, prepare the aromatics. Slice 2-3 ginger into thin pieces, 2 scallions into sections, and 2 cloves of garlic lightly crushed. Place these in the fish cavity and on top to eliminate any fishy odor. For extra flavor, add a splash of light soy sauce, a teaspoon of sesame oil, and a pinch of salt to the cavity.

Bring water to a boil in a steamer. Place the turbot on a heatproof dish, then set the dish in the steamer. Steam over high heat for 8-10 minutes (depending on thickness) until the flesh turns opaque and flakes easily. Avoid overcooking, as it can make the fish dry.

Once done, remove the turbot and discard the ginger and scallions. Garnish with fresh cilantro or thinly sliced red chili for color. Drizzle with 1 tablespoon of light soy sauce mixed with a drop of sesame oil. Serve immediately with steamed rice to enjoy its tender, umami-rich flavor. This simple method lets the turbot’s natural sweetness shine, making it a delightful and nutritious dish.
