Ingredients: 2 fresh crucian carp (cleaned and scored), 3 slices of ginger, 2 cloves of garlic, 2 green onions (cut into sections), 3 tbsp cooking oil, 1 tbsp light soy sauce, 1 tbsp dark soy sauce, 1 tbsp Shaoxing wine, 1 tsp sugar, 1 cup water, and a pinch of salt and white pepper.

Steps:
