A Guide to Making Cantonese Mooncakes

Cantonese mooncakes, renowned for their delicate flaky crust and rich fillings, are a staple of Mid-Autumn Festival celebrations. Creating these treats at home is rewarding—here’s a simplified breakdown.

For the Crust (Shortcrack Pastry): Combine 100g softened butter, 200g cake flour, and 50g powdered sugar. Knead into a smooth dough, wrap, and chill for 1 hour. Divide into small balls for later use.

For the Fillings: Traditional options include lotus seed paste or red bean paste. For homemade lotus paste, boil 200g dried lotus seeds until tender, then blend with 100g sugar and 2 tbsp oil until smooth. Add salted egg yolks (optional) for authenticity.

Assembly: Flatten a dough ball into a wrapper, wrap in filling, and seal edges. Press into a mooncake mold dusted with flour to imprint patterns.

Baking: Brush with egg wash, bake at 180°C for 20 minutes until golden. Let cool, then store for 2–3 days to allow flavors to meld.
