How to Make Perfect Royal Icing Cookies: A Step-by-Step Guide

Royal icing cookies are a delightful treat, perfect for holidays or gifts. Here’s a simple guide to create these sweet, decorated masterpieces.

Ingredients & Tools: You’ll need sugar cookies (store-bought or homemade), royal icing (powdered sugar, meringue powder, and water), gel food coloring, piping bags, and small spatulas.

Step 1: Bake & Cool Cookies

Roll out cookie dough to ¼-inch thickness, cut into shapes, and bake at 350°F (175°C) for 8–12 minutes until golden. Cool completely—icing warm cookies causes melting.

Step 2: Prepare Royal Icing

Mix 4 cups powdered sugar, 3 tbsp meringue powder, and 5 tbsp water. Beat until stiff peaks form. Divide into bowls; add gel color (start with a drop, as colors deepen). For flooding (filling designs), use thick-consistency icing (holds shape); for details, thin with water until it drips slowly off a spoon.

Step 3: Decorate

Outline each cookie with thick icing using a piping bag. Let outlines dry for 5–10 minutes, then flood the center with thinned icing, guiding it to the edges with a toothpick. For marbled effects, drag a toothpick through wet flood icing. Add sprinkles or piped details while wet.

Step 4: Dry & Store

Let cookies dry at room temperature for 4–6 hours (or overnight) until icing is hard. Store in an airtight container for up to 2 weeks.

With practice, you’ll create beautiful, tasty cookies—ideal for sharing or savoring!
