How to Make Liangpi: A Step-by-Step Guide

Liangpi, a beloved Chinese cold noodle dish, is famous for its chewy texture and tangy, spicy flavors. Here’s a simple guide to making it at home.

Step 1: Prepare the Dough

Mix 2 cups of wheat flour with 1 cup of water and a pinch of salt. Knead into a smooth dough, then let it rest for 30 minutes. Divide the dough into small balls.

Step 2: Wash the Dough

Submerge a dough ball in water and knead vigorously until the water turns milky. Strain the liquid through a cheesecloth into a bowl, leaving the gluten behind. Repeat with remaining dough. Let the starch slurry settle for 4–6 hours, then pour off the top water, leaving thick starch at the bottom.

Step 3: Cook the Noodles

Stir the starch well, pour it into a greased pan, and steam for 15–20 minutes until set. Cool, then cut into thin strips.

Step 4: Make the Sauce

Mix 2 tbsp soy sauce, 1 tbsp vinegar, 1 tsp chili oil, 1 minced garlic, and a pinch of sugar. Adjust to taste.

Step 5: Assemble

Toss the liangpi strips with the sauce, cucumber shreds, bean sprouts, and cilantro. Serve chilled.
