How to Make Milk Mantou: A Comprehensive Guide

Milk mantou, soft, fluffy, and subtly sweet, are a beloved staple in many households. Here’s a detailed guide to crafting these delightful buns at home.

Ingredients:

- 300g all-purpose flour

- 150ml warm milk (40°C)

- 30g sugar

- 3g active dry yeast

- 1 egg (optional, for richness)

- 15g butter (softened)

Steps:

1. Activate yeast: Mix warm milk, sugar, and yeast. Let sit for 5–10 minutes until frothy.

2. Knead dough: In a large bowl, combine flour, yeast mixture, and egg (if using). Knead into a smooth dough. Add softened butter and continue kneading until elastic (about 10–15 minutes).

3. First rise: Place dough in an oiled bowl, cover with a damp cloth, and let it rise in a warm spot for 1–2 hours, or until doubled in size.

4. Shape mantou: Punch down the dough, divide into equal portions, and roll each into a smooth ball. Place them on a parchment-lined steamer, leaving space between each.

5. Second rise: Let the dough balls rest for 15–20 minutes.

6. Steam: Bring water to a boil in a steamer. Add the mantou, cover, and steam on high heat for 15–18 minutes. Turn off the heat and let them sit for 5 minutes before opening the lid to prevent deflation.

Tips: For a richer flavor, replace some milk with evaporated milk. Enjoy plain or with butter, jam, or as a side to soups. These milk mantou stay soft for days and are perfect for breakfast or snacks!
