How to Make Guotie: A Step-by-Step Guide

Guotie, or pan-fried dumplings, are a beloved Chinese snack with a crispy bottom and juicy filling. Mastering them is simple with this guide.

Step 1: Prepare the Filling

Mix ground pork (or chicken/vegetables) with chopped cabbage, scallions, ginger, garlic, soy sauce, sesame oil, salt, and a pinch of sugar. For a juicy texture, add water or broth gradually until the mixture feels slightly sticky. Let it rest for 15 minutes to blend flavors.

Step 2: Wrap the Dumplings

Use dumpling wrappers (store-bought or homemade). Place a teaspoon of filling in the center, fold the wrapper in half, and pinch the edges tightly, creating small pleats to seal. Ensure no air pockets remain to prevent bursting during cooking.

Step 3: Pan-Fry to Perfection

Heat a non-stick skillet over medium heat. Add 2 tablespoons of oil, arrange dumplings in a single layer (avoid overcrowding), and fry for 2-3 minutes until bottoms turn golden. Pour in 50ml of water, cover immediately, and steam for 8-10 minutes until cooked through. Uncover, increase heat slightly, and fry for another 1-2 minutes to crisp the bottoms.

Step 4: Serve

Remove guotie with a spatula, letting the crispy bottoms face upward. Serve hot with dipping sauces like black vinegar with garlic or soy sauce.

With crispy, golden bottoms and tender fillings, homemade guoties are sure to impress!
