How to Make Stewed Tofu: A Comprehensive Guide

Stewed tofu is a versatile and comforting dish, loved for its tender texture and ability to absorb flavors. Here’s a simple yet delicious method to master it.

First, choose firm or extra-firm tofu for better texture. Drain the tofu, press it gently to remove excess water, and cut into 1-inch cubes. Heat 2 tablespoons of oil in a wok or pot over medium heat. Sauté minced garlic, ginger, and chopped scallions until fragrant (about 30 seconds). Add the tofu cubes and pan-fry lightly until golden on all sides.

Next, prepare the sauce. In a bowl, mix 3 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1 teaspoon of sugar, and 1 cup of water or broth. Pour the sauce over the tofu, bring to a simmer, then reduce heat to low. Cover and let it stew for 10–15 minutes, allowing the tofu to soak up the flavors.

For extra richness, you can add ingredients like mushrooms, ground pork, or bell peppers during the last 5 minutes of cooking. To thicken the sauce, mix 1 teaspoon of cornstarch with a little water and stir in gently. Garnish with chopped cilantro or extra scallions before serving.
