How to Make Chive and Egg Pancakes (Jiucai Hezi)

Chive and egg pancakes, or *jiucai hezi*, are a savory, golden snack loved for their crispy exterior and juicy filling. Here’s a simple guide to making them at home.

### Ingredients

For the dough: 2 cups all-purpose flour, ¾ cup warm water, ¼ tsp salt, 1 tbsp oil.

For the filling: 5 eggs (scrambled and crumbled), 200g chives (finely chopped), 1 tsp sesame oil, ½ tsp white pepper, salt to taste, 1 tbsp oil for cooking.

### Steps

1. Make the dough: Mix flour, salt, and oil. Gradually add warm water, kneading until smooth. Cover and rest for 30 minutes.

2. Prepare the filling: Heat 1 tbsp oil in a pan, scramble eggs until set, then crumble. Cool, then mix with chives, sesame oil, white pepper, and salt.

3. Shape the pancakes: Roll the dough into a log, cut into 8 equal pieces. Flatten each piece into a circle, place 1 tbsp filling in the center, fold edges to seal, and pinch to form a sealed pouch. Roll out into a ½-inch-thick circle.

4. Cook: Heat a non-stick pan with 1 tbsp oil. Fry pancakes over medium heat for 3–4 minutes per side until golden and crispy.

- Ensure dough edges are tightly sealed to prevent filling from leaking.

- For extra flavor, add a pinch of five-spice powder to the filling.
