How to Make Oat Mantou: A Simple Guide

Oat mantou, a nutritious twist on the classic steamed bun, combines the heartiness of oats with the softness of traditional mantou. Here’s a step-by-step guide to making them at home.

Ingredients:

- 200g rolled oats

- 300g all-purpose flour

- 7g active dry yeast

- 30g sugar (adjust to taste)

- 180ml warm water (≈40°C)

- A pinch of salt

Steps:

1. Prepare the oat flour: Blend rolled oats into a fine powder using a blender. Mix with all-purpose flour, sugar, salt, and yeast in a large bowl.

2. Knead the dough: Gradually add warm water, stirring until a shaggy dough forms. Knead on a floured surface for 10–15 minutes until smooth and elastic. If the dough is too sticky, add a little more flour.

3. First rise: Place the dough in an oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1–2 hours, or until doubled in size.

4. Shape the mantou: Punch down the dough to release air. Divide into 8–10 equal portions. Roll each into a ball, then flatten slightly into a disc.

5. Second rise: Place the buns on parchment paper, cover, and let them rise for another 30 minutes.

6. Steam: Bring a steamer to a high boil. Arrange the mantou (leaving space between them), cover, and steam for 15–18 minutes. Turn off the heat and let them sit for 5 minutes before opening the lid to prevent shrinking.
