- Firm tofu (1 block, pressed to remove excess water)

- Soy sauce, light and dark (3 tbsp each)

- Rock sugar (1 tbsp, or to taste)

- Star anise, cinnamon, and Sichuan peppercorns (a pinch each)

- Ginger, garlic, and green onions (sliced)

- Water or vegetable broth (enough to cover tofu)

- Optional: Five-spice powder, mushrooms, or hard-boiled eggs for extra depth.

Steps:

1. Prepare the Tofu: Cut pressed tofu into 2-inch cubes. For a chewier texture, deep-fry until golden, or pan-fry until lightly crisp.
