How to Make Steamed Buns: A Simple Guide

Steamed buns, or "mantou," are soft, fluffy Chinese staples that pair perfectly with meals or enjoyed alone. Making them at home is easier than you think—here’s a basic guide to get you started.

Ingredients: All-purpose flour (2 cups), active dry yeast (1 tsp), sugar (1 tbsp), warm water (¾ cup), a pinch of salt. Optional: Add milk for richer flavor or a little oil for extra softness.

Steps:

1. Activate yeast: Mix yeast, sugar, and warm water (110°F/45°C). Let sit for 5-10 minutes until frothy.

2. Make dough: Combine flour and salt in a bowl. Pour in yeast mixture and stir until a shaggy dough forms. Knead on a floured surface for 10 minutes until smooth and elastic.

3. First rise: Place dough in an oiled bowl, cover with a damp cloth, and let rise in a warm spot for 1–2 hours, or until doubled in size.

4. Shape buns: Punch down the dough, divide into small portions, and roll each into a ball. For sweeter buns, add a red bean paste filling before shaping.

5. Second rise: Place buns on parchment paper, cover, and let rise for 30 minutes.

6. Steam: Arrange buns in a steamer, leaving space between them. Steam over high heat for 15–20 minutes. Turn off heat, wait 5 minutes before opening the lid to prevent deflation.

Tips: For crusty tops, steam without a lid for the last 2 minutes. Store leftovers in an airtight container or freeze for later. Enjoy your homemade mantou plain or with your favorite toppings!
