A Christmas Cake Recipe Guide

Christmas cake, a centerpiece of festive joy, blends rich flavors with heartfelt tradition. While recipes vary, here’s a classic guide to crafting a moist, spiced fruitcake perfect for the season.

Ingredients:

- 250g mixed dried fruits (sultanas, raisins, cherries)

- 250g softened butter

- 200g brown sugar

- 4 large eggs

- 300g self-raising flour

- 2 tsp mixed spice (cinnamon, nutmeg, cloves)

- 1 tsp vanilla extract

- Zest of 1 orange/lemon

- 100g chopped nuts (walnuts/almonds)

- 3-4 tbsp brandy/rum (optional, for soaking)

Steps:

1. Soak Fruits: Combine dried fruits with brandy/rum (if using) in a bowl. Cover and leave overnight to plump up.

2. Cream Butter & Sugar: Beat softened butter and brown sugar until light and fluffy.

3. Add Eggs: Beat in eggs one at a time, then fold in vanilla and zest.

4. Fold Dry Ingredients: Gently fold in flour, spice, and soaked fruits (with liquid) until just combined. Stir in nuts.

5. Bake: Pour into a greased 20cm round tin. Bake at 150°C (300°F) for 1.5–2 hours, or until a skewer comes out clean.

6. Decorate: Once cooled, cover with marzipan, then royal icing. Add festive decorations like holly or silver balls.

Tips: For extra moisture, "feed" the cake with extra alcohol weekly after baking. Store in an airtight container to let flavors deepen. This cake keeps for weeks, making it a perfect homemade gift.

Enjoy the process, and savor the taste of Christmas!
