Ingredients: 500g pork ribs, 300g Chinese yam, 3 ginger slices, 2 scallions, 1 tbsp cooking wine, 2 tbsp light soy sauce, 1 tbsp dark soy sauce, 1 tsp sugar, salt to taste, and water.

Steps:

1. Prep the ribs: Rinse ribs, cut into 3-4 cm pieces, and blanch in boiling water with cooking wine and ginger for 5 minutes. Remove and drain.
