How to Make Classic Chicken and Potato Stew

Chicken and potato stew is a hearty, comforting dish loved worldwide. Here’s a simple yet delicious recipe to guide you.

First, gather ingredients: 1 kg chicken (cut into pieces), 4-5 potatoes (peeled and cubed), 1 onion (chopped), 3 cloves garlic (minced), 2 carrots (sliced), 1 liter broth, 1 bay leaf, salt, pepper, and olive oil. Optional additions include thyme, rosemary, or bell peppers for extra flavor.

Start by heating olive oil in a large pot over medium heat. Season chicken with salt and pepper, then sear until golden brown (about 5 minutes per side). Remove and set aside. In the same pot, sauté onions and garlic until soft (3-4 minutes), then add carrots and cook for 2 more minutes.

Return chicken to the pot, add broth, bay leaf, and herbs (if using). Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes. Add potatoes and cook for another 15–20 minutes, until chicken is tender and potatoes are soft. Stir occasionally to prevent sticking.

Taste and adjust seasoning. For a thicker stew, mash some potatoes against the pot walls or mix in 1 tbsp flour. Serve hot, garnished with fresh parsley.
