A Guide to Making Delicious Braised Potatoes

Braised potatoes are a comforting, versatile dish loved for their crispy edges and tender, flavorful centers. Here’s a simple yet foolproof recipe to achieve perfection.

Start by selecting 500g of waxy potatoes (like Yukon Gold or baby potatoes), peeled and cut into 1.5-inch chunks. Parboil them for 5 minutes until slightly softened—this ensures even cooking later. Drain and pat dry.

Heat 2 tablespoons of oil in a pan over medium-high heat. Add the potatoes and sear until golden brown on all sides, about 8-10 minutes. For extra flavor, toss in 2 minced garlic cloves, a sliced onion, and a pinch of dried herbs (thyme or rosemary work well).

Pour in ½ cup of chicken or vegetable broth, 1 tablespoon of soy sauce, and 1 teaspoon of sugar. Stir gently, then cover and simmer for 10-15 minutes, occasionally shaking the pan, until the potatoes are fork-tender and the sauce thickens into a glaze.

For a spicy kick, add a dash of chili sauce or crushed red flakes during the last 5 minutes. Garnish with chopped green onions or sesame seeds before serving.

This dish pairs well with rice, bread, or grilled meats. Feel free to customize with ingredients like bacon, mushrooms, or carrots to create your own signature version!
