Pea jelly, a refreshing and versatile Chinese summer dish, is beloved for its smooth texture and cooling taste. Here’s a basic guide to making it at home.
Ingredients: 200g dried peas, 1.5L water, 5g gypsum powder (or food-grade lime), salt, and optional toppings like chili oil, garlic, soy sauce, or cucumber shreds.
Steps:
1. Soak the peas: Rinse dried peas, soak in water for 6–8 hours (or overnight) until softened. Drain and blend with 1L water until smooth. Strain the mixture through a cheesecloth to extract the pea milk, discarding the solids.
2. Cook the milk: Pour the pea milk into a pot, add a pinch of salt, and heat gently, stirring constantly, until it simmers (do not boil). Remove from heat.
3. Set the jelly: Dissolve gypsum powder in 50ml water. Slowly stir the gypsum solution into the hot pea milk. Let it rest for 15–20 minutes until solidified.
4. Serve: Cut the jelly into cubes. Top with your favorite seasonings—chili oil, minced garlic, and soy sauce are classic choices. For extra freshness, add cucumber or coriander.
