Classic Red Date Cake
Start by pitting 20 red dates and soaking them in hot water for 20 minutes until soft. Drain and blend into a smooth paste. In a bowl, whisk 2 eggs with 100g sugar until fluffy, then add 120ml vegetable oil and the date paste, mixing well. Sift in 150g all-purpose flour, 1 tsp baking powder, and a pinch of salt, folding gently until just combined. Pour the batter into a greased cake pan and bake at 180°C (350°F) for 35–40 minutes until a toothpick comes out clean. Cool before slicing.
