How to Make Luffa and Egg Soup: A Simple Guide

Luffa and egg soup is a light, nutritious, and quick-to-make dish loved for its fresh flavor. Here’s a simple guide to preparing it in minutes.

Ingredients: 1 fresh luffa (about 200g), 2 eggs, 1 clove garlic (minced), 1 liter of water or broth, salt, white pepper, 1 tsp sesame oil, and a pinch of chopped green onions for garnish.

Steps:

1. Prep the luffa: Peel the luffa, cut it in half lengthwise, scoop out the seeds, then dice it into bite-sized pieces.

2. Beat the eggs: In a bowl, whisk the eggs with a pinch of salt until well blended.

3. Cook the base: Heat a pot over medium flame, add a drizzle of oil, sauté minced garlic until fragrant. Toss in the luffa pieces and stir-fry for 1 minute.

4. Simmer: Pour in water or broth, bring to a boil, then reduce heat and let it simmer for 3–5 minutes until the luffa turns tender.

5. Add the egg: Slowly pour the beaten egg into the simmering soup in a thin stream, gently stirring to create delicate ribbons.

6. Season: Add salt and white pepper to taste. Drizzle with sesame oil, garnish with green onions, and serve hot.

Tips: For a richer flavor, use chicken broth instead of water. Avoid overcooking the luffa to keep it crisp-tender. Enjoy this comforting soup as a starter or a light meal!
