How to Make Authentic Korean Doenjang Jjigae: A Complete Guide

Korean doenjang jjigae, a rich and savory fermented soybean paste stew, is a comforting staple in Korean cuisine. Here’s a simple yet authentic recipe to recreate this beloved dish at home.

Ingredients:

- 2 tbsp doenjang (Korean fermented soybean paste)

- 200g pork belly (or tofu/anchovies for vegetarian option), sliced

- 1 cup dashima (kombu) stock

- 1 potato, cubed

- 1 zucchini, halved lengthwise and sliced

- 1/2 onion, quartered

- 2-3 tbsp gochugaru (Korean chili flakes, optional for spice)

- 2-3 cloves garlic, minced

- 1 green onion, chopped

- 1 egg (optional, for serving)

Steps:

1. Prepare the base: Sauté pork belly in a pot until crispy. Add minced garlic and gochugaru, stirring for 30 seconds.

2. Add doenjang: Dissolve doenjang in 2 tbsp of dashima stock, then pour into the pot. Stir well to coat the meat, cooking for 1 minute to deepen flavor.

3. Simmer: Pour in the remaining dashima stock, add potato and onion, and bring to a boil. Reduce heat, cover, and simmer for 10 minutes until potatoes soften.

4. Vegetables: Add zucchini and cook for 5 more minutes. Adjust seasoning—if too salty, add a splash of water; if bland, more doenjang.

5. Finish: Crack an egg into the center (optional), cover, and cook until the white sets. Garnish with green onion and serve hot with rice.

Tips: For a deeper umami, use anchovy stock instead of dashima. Customize with mushrooms, clams, or kimchi for extra flavor. Enjoy this hearty stew on a cold day for a true taste of Korea!
