How to Make Chive and Egg Boxes: A Complete Guide

Chive and egg boxes, a beloved Chinese savory snack, are crispy, golden, and packed with flavor. Here’s a simple, step-by-step guide to making them at home.

Ingredients:

- 200g all-purpose flour

- 120ml warm water

- 150g chives, finely chopped

- 3 eggs, beaten

- 1 tsp salt (adjust to taste)

- 2 tbsp cooking oil

- Optional: Sesame seeds, white pepper

Steps:

1. Make the dough: Mix flour and warm water gradually until a smooth, non-sticky dough forms. Knead for 5 minutes, then rest for 30 minutes covered with a damp cloth.

2. Prepare the filling: Heat 1 tbsp oil in a pan, scramble the eggs until set, then cool and chop. Mix eggs with chives, salt, white pepper, and remaining oil.

3. Shape the boxes: Roll the dough into a log, cut into 8 equal pieces. Flatten each piece into a thin circle (about 15cm diameter). Place 1-2 tbsp filling in the center, fold into a semi-circle, and pinch the edges to seal. Crimp the edges with a fork for a decorative touch.

4. Cook: Heat 2-3 cm oil in a wok over medium heat. Fry boxes for 3-4 minutes per side until golden brown and crispy. Drain on paper towels.

Serve hot as a breakfast or snack, dipped in soy-vinegar sauce. Enjoy the crispy crust and savory, aromatic filling—perfect for any occasion!
