Tonkatsu, a beloved Japanese crispy pork cutlet, is simple yet delicious when made right. Here’s a step-by-step guide to mastering this dish.

First, choose the right cut: pork loin (lean) or belly (fatty, for juicier results). Cut the meat into 1–1.5 inch thick pieces, then pound gently with a meat mallet to even thickness and tenderize. Season lightly with salt and pepper.

Next, set up a breading station: three shallow dishes with flour, beaten eggs, and panko breadcrumbs. Dredge each cutlet in flour, dip fully in egg, then press firmly into panko, coating evenly on all sides. For extra crunch, let the breaded cutlet rest for 5 minutes.
