Scallion lamb, a beloved Chinese stir-fry, is celebrated for its tender slices of lamb and fragrant, caramelized scallions. Here’s a step-by-step guide to mastering this dish.

Ingredients: 300g lamb loin (sliced thinly against the grain), 6-8 scallions (cut into 3-inch segments), 2 tbsp cooking oil, 1 tbsp soy sauce, 1 tsp Shaoxing wine, 1 tsp sugar, ½ tsp white pepper, and 1 tsp sesame oil.

Steps:
