How to Make Rose Sugar: A Comprehensive Guide

Rose sugar is a fragrant, versatile treat that adds a floral sweetness to teas, baked goods, and desserts. Making it at home is simple and requires just two main ingredients: fresh roses and sugar. Here’s a step-by-step guide to create this delightful delicacy.

First, choose pesticide-free rose petals (preferably organic) for safety. Remove the white bases, as they can taste bitter. Gently pat the petals dry with a paper towel to remove moisture.

Next, layer the petals and granulated sugar (white or cane sugar works best) in a clean, airtight jar. A common ratio is 1 part petals to 2 parts sugar. Alternate layers, starting and ending with sugar to ensure the petals are fully coated. Seal the jar tightly and store it in a cool, dark place.

Let the mixture infuse for 1–2 weeks, shaking the jar daily to distribute the sugar and speed up the process. The petals will gradually release their oils, tinting the sugar a pale pink and infusing it with their aroma. Once the petals are brittle and fragrant, strain the mixture to remove the petals (or leave them for a more textured sugar).

Store the rose sugar in an airtight container for up to 6 months. Use it to sweeten lemonade, flavor shortbread, or sprinkle over oatmeal for a touch of floral elegance. This homemade treat is not only delicious but also makes a thoughtful gift. Enjoy the process and the lovely results!
