How to Make Chive and Pork Dumplings: A Complete Guide

Chive and pork dumplings, or "jiucai jiaozi" in Chinese, are a beloved savory snack with a crispy bottom and juicy filling. Here’s a simple guide to making them at home.

Ingredients: For the filling, mix 200g ground pork with 1 cup chopped chives, 1 tbsp soy sauce, 1 tsp sesame oil, 1/2 tsp salt, and a pinch of white pepper. For the wrapper, combine 250g all-purpose flour with 120ml warm water, kneading into a smooth dough. Let it rest for 30 minutes.

Steps:

1. Prepare the filling: Combine all filling ingredients and stir clockwise until sticky.

2. Roll wrappers: Divide the dough into small balls, roll each into a thin 8cm circle.

3. Fill and fold: Place 1 tsp filling in the center, fold the wrapper in half, and pinch edges to seal, creating pleats for a classic look.

4. Cook: Heat 2 tbsp oil in a non-stick pan over medium heat. Arrange dumplings in a single layer, fry for 2 minutes until golden. Pour 50ml water, cover, and steam for 8-10 minutes until the water evaporates.

Serve hot with a dipping sauce of soy sauce, vinegar, and chili oil. Enjoy these crispy, flavorful dumplings as a snack or meal!
