How to Make Scallion Pancakes: A Simple Guide

Scallion pancakes, a beloved Chinese street food, are crispy, savory, and surprisingly easy to make. Here’s a basic recipe to get you started.

Ingredients:

- 1½ cups all-purpose flour

- ½ cup warm water

- ½ cup cold water

- 1 tsp salt

- 3–4 chopped scallions

- 2 tbsp cooking oil

Steps:

1. Make the dough: In a large bowl, mix flour and salt. Gradually add warm and cold water, kneading until a smooth, soft dough forms. Let it rest for 30 minutes.

2. Shape the pancake: Divide the dough into 4 equal balls. Roll each into a thin rectangle, brush with oil, and sprinkle scallions evenly.

3. Roll and coil: Tightly roll the rectangle into a log, then coil it into a spiral. Flatten gently into a ½-inch thick pancake.
