How to Make Pork and Chive Dumplings

Pork and chive dumplings, a beloved Chinese dish, are delicious and easy to prepare. Here’s a simple guide to making them from scratch.

For the filling, you’ll need 300g ground pork, 200g chopped chives, 2 minced garlic cloves, 1 tbsp grated ginger, 2 tbsp soy sauce, 1 tbsp sesame oil, 1 tsp salt, and a pinch of white pepper. Mix all ingredients thoroughly in a bowl and let it rest for 15 minutes to enhance the flavors.

For the wrapper, combine 250g all-purpose flour with 120ml warm water. Knead into a smooth dough, then cover and let it rest for 30 minutes. Roll the dough into a log, cut into small pieces, and flatten each into a thin circle (about 8cm in diameter).

Assembling the dumplings: Place a teaspoon of filling in the center of a wrapper. Fold it in half, pinch the edges to seal, and create pleats for a classic look. Ensure no air is trapped inside to prevent bursting during cooking.

Cooking options: Boil dumplings in salted water until they float (about 5-7 minutes). For a crispier texture, pan-fry them: first boil for 2 minutes, then drain and pan-fry with oil until golden brown on both sides.

Serve hot with a dipping sauce of soy sauce, vinegar, and chili oil. Enjoy these flavorful dumplings as a satisfying meal or snack!
