How to Make Chop Chili: A Comprehensive Guide

Chop chili, a fiery and flavorful condiment from Hunan, China, is a staple in Chinese cuisine, adding a spicy kick to dishes like stir-fries, noodles, and steamed fish. Here’s a simple guide to making it at home.

Ingredients: 500g fresh red chilies (stemmed), 200g garlic (peeled), 50g ginger (sliced), 1 tbsp salt, 100g sugar, 1 bottle (500ml) light soy sauce, 100ml rice wine, and 100ml vegetable oil.

Steps:

1. Prepare Chilies: Wash chilies, pat dry, and roughly chop. For milder heat, remove seeds; for extra spiciness, keep them.

2. Blend Aromatics: Pulse garlic, ginger, and chilies in a food processor until finely minced (avoid over-blending to prevent a paste-like texture).

3. Marinate: In a large bowl, mix the minced chili with salt, sugar, soy sauce, and rice wine. Let it sit for 2 hours to allow flavors to meld.

4. Sterilize: Boil glass jars and lids, then dry completely to prevent spoilage.

5. Store: Transfer the mixture into jars, pour a thin layer of vegetable oil on top to seal, and seal tightly. Refrigerate for at least 1 week before use to develop depth.

Tips: Use fresh, firm chilies for the best texture. Adjust salt and sugar to taste. The chop chili will last up to 6 months refrigerated. Enjoy it as a dipping sauce or stir-fry ingredient!
