Lotus root fries, or "oujia," are a crispy, savory Chinese snack loved for their unique texture. Here’s a simple guide to making them at home.

Ingredients: Fresh lotus root, 200g lean ground pork, 2 cloves minced garlic, 1 tbsp soy sauce, 1 tsp sesame oil, salt, pepper, flour, cornstarch, water, and oil for frying.

Steps:

1. Prepare the lotus root: Peel and slice the lotus root into 5mm-thick rounds. Soak in water with a dash of vinegar to prevent browning. Pat dry.

2. Make the filling: Mix ground pork with garlic, soy sauce, sesame oil, salt, and pepper until well combined.

3. Assemble: Place a small amount of filling between two lotus root slices, pressing gently to seal.

4. Batter: In a bowl, whisk flour, cornstarch (2:1 ratio), and water to form a smooth, thick batter. Dip each lotus root sandwich into the batter, coating evenly.
