Ingredients:

500g beef chuck (cut into 2-inch cubes), 2 large tomatoes (chopped), 1 onion (diced), 3 garlic cloves (minced), 2 carrots (sliced), 1 celery stalk (chopped), 2 tbsp tomato paste, 1 tsp dried herbs (thyme/rosemary), 500ml beef broth, 2 tbsp olive oil, salt, and pepper.

Steps:

1. Sear the Beef: Heat olive oil in a large pot over medium-high heat. Season beef with salt and pepper, then sear until browned on all sides. Remove and set aside.

2. Sauté Aromatics: In the same pot, add onion, garlic, carrots, and celery. Cook until softened (5-7 minutes). Stir in tomato paste and dried herbs, cook for 1 more minute.

3. Simmer: Return beef to the pot. Add chopped tomatoes and beef broth. Bring to a boil, then reduce heat to low. Cover and simmer for 1.5–2 hours, or until beef is tender.

4. Season and Serve: Adjust salt and pepper to taste. Serve hot with crusty bread or mashed potatoes.
