Huaihua cakes, a beloved springtime delicacy, are fragrant, fluffy, and easy to prepare. Made from fresh locust flowers, these pancakes offer a unique floral aroma and a hint of sweetness. Here’s a simple guide to making them at home.
Ingredients:
- 200g fresh or dried huaihua (locust flowers)
- 150g all-purpose flour
- 1 egg
- 150ml water or milk
- 1 tbsp sugar (adjust to taste)
- ½ tsp salt
- 1 tsp baking powder
Steps:
1. Prepare the flowers: If using fresh huaihua, rinse and dry them. For dried ones, soak in warm water until soft, then chop finely.
2. Mix batter: In a bowl, whisk together flour, baking powder, salt, and sugar. Add the egg, milk/water, and huaihua. Stir until smooth—no lumps.
3. Rest the batter: Let it sit for 15–20 minutes to allow the flavors to meld.
4. Cook: Heat a non-stick pan over medium-low heat. Lightly oil it. Pour a ladle of batter, spreading it into a thin circle. Cook for 2–3 minutes until bubbles form, then flip and cook the other side until golden.
5. Serve: Enjoy warm with honey, yogurt, or plain.
These cakes are best eaten fresh but can be refrigerated for 1–2 days. Reheat in a pan to restore crispiness. A perfect blend of nature and simplicity!
