Radish cake, or "lo bak go" in Cantonese, is a savory, comforting dim sum staple loved for its crispy edges and tender, radish-infused center. Here’s a simple guide to making it at home.

Ingredients:

- 500g white radish (peeled and grated), excess water squeezed out

- 200g rice flour + 100g tapioca flour (mixed with 500ml water, salt, and white pepper)

- 100 diced Chinese sausage (lap cheong), 50 dried shrimp (rehydrated and chopped)

- 2 scallions (sliced), 2 cloves garlic (minced)

Steps:

1. Sauté Aromatics: Heat 2 tbsp oil in a wok. Fry garlic until fragrant, then add Chinese sausage and dried shrimp, cooking until crispy.

2. Cook Radish: Stir in grated radish, cook for 5–7 minutes until softened.

3. Mix Batter: Pour the flour-water mixture into the wok, stirring constantly until thickened (about 3–4 minutes). Remove from heat.

4. Steam: Pour the batter into a greased tray. Steam over high heat for 40–50 minutes until set.

5. Pan-Fry (Optional): Let the cake cool, then slice into rectangles. Pan-fry in oil until golden on both sides for a crispy texture.
