How to Make Homemade Chinese Doughnuts (Youtiao)

Homemade youtiao, or Chinese doughnuts, are crispy, golden, and incredibly delicious. Follow this simple guide to master this classic breakfast treat.

Ingredients:

- 300g all-purpose flour

- 1 tsp salt

- 1 tsp baking powder

- 1 tbsp sugar

- 200ml warm water (≈40°C)

- 1 tbsp vegetable oil

- Oil for frying

Steps:

1. Prepare the dough: In a large bowl, mix flour, salt, baking powder, and sugar. Gradually add warm water and oil, knead into a smooth dough. Cover and let rest for 1 hour.

2. Shape the doughnuts: Roll the dough into a 1cm-thick rectangle. Cut into 2cm-wide strips. Stack two strips, press the center lightly with a chopstick, and stretch to 15cm long.

3. Proof the doughnuts: Cover shaped doughnuts and let rest for 20 minutes until slightly puffy.

4. Fry to perfection: Heat oil to 180°C in a deep pot. Gently slide doughnuts into the oil, frying for 3-4 minutes per side until golden brown and puffed. Drain on paper towels.

Serve hot with soy milk or congee. The key is kneading the dough thoroughly and maintaining the right oil temperature. Enjoy your crispy, homemade youtiao!
