- Fresh ripe yellow peaches (firm, unbruised),

- Granulated sugar or syrup (light syrup is ideal),

- Lemon juice (to prevent browning),

- Sterilized glass jars with lids,

- Large pot, water bath canner, and ladle.

Steps:

1. Prepare the Peaches: Wash peaches thoroughly. Blanch them in boiling water for 30-60 seconds, then transfer to ice water. The skins will slip off easily. Halve, remove pits, and slice if desired.

2. Prevent Browning: Soak peach slices in a mixture of water and lemon juice (1 tbsp lemon juice per 1 cup water) for 5 minutes.
