Saltwater shrimp, or *saline shrimp*, is a light and flavorful dish that highlights the natural sweetness of shrimp. Here’s a simple, foolproof method to achieve tender, juicy shrimp every time.

Ingredients:

- 500g fresh shrimp, peeled and deveined (tails on or off as preferred)

- 4 cups water

- 2 tbsp sea salt

- 1 tbsp sugar (balances saltiness)

- 5-6 ginger slices, lightly smashed

- 2 green onions, cut into sections

- 5-6 Sichuan peppercorns (optional, for subtle fragrance)

Steps:

1. Prepare the brine: In a pot, combine water, sea salt, sugar, ginger, green onions, and peppercorns. Bring to a boil over medium heat, stirring until salt and sugar dissolve. Simmer for 2 minutes, then remove from heat and let cool completely. Brine must be cold to prevent shrimp from turning tough.
