Ingredients: 2 kg pork trotters, 5 slices ginger, 3 cloves garlic, 1 star anise, 2 cinnamon sticks, 3 tbsp soy sauce, 2 tbsp dark soy sauce, 1 tbsp sugar, 1 cup rice wine, 4 cups hot water, salt to taste.

Steps:

1. Preparation: Clean trotters thoroughly, trim excess fat, and cut into sections. Blanch in boiling water for 5 minutes, then rinse to remove impurities.

2. Sauté Aromatics: Heat oil in a pot over medium heat. Sauté ginger, garlic, star anise, and cinnamon until fragrant.
