Stir-fried bread, or "chao mantou" in Chinese, is a quick, comforting dish that transforms plain steamed buns into a crispy, flavorful meal. Here’s a simple guide to mastering it.

Start with ingredients: You’ll need leftover steamed buns (cut into cubes or slices), eggs (beaten), green onions (chopped), garlic (minced), and your choice of mix-ins like diced ham, peas, or carrots. For seasoning, soy sauce, sesame oil, and a pinch of sugar work wonders.

Prep the buns: Day-old buns are ideal—they’re firmer and hold their shape better. Cut them into 1-inch cubes. For extra crispiness, lightly toast the cubes in a dry pan or toaster until golden.

Cook the dish: Heat 2 tablespoons of oil in a wok over medium heat. Scramble the eggs first, then set aside. In the same wok, sauté garlic and green onions until fragrant. Add the buns, stirring gently to coat them in oil. If using, now add mix-ins like ham or peas and cook for 2–3 minutes.
