How to Make Laba Garlic: A Step-by-Step Guide

Laba garlic, a traditional Chinese pickle enjoyed during the Laba Festival, turns jade-green with a tangy, savory flavor. Making it is simple and requires just a few ingredients. Here’s a detailed guide.

Ingredients: 1 fresh garlic head (peeled), 500ml white vinegar (6% acidity), 50g sugar, a clean glass jar.

Steps:

1. Prepare the garlic: Select plump, firm garlic bulbs. Peel off the outer layers but keep the cloves intact. Soak in water for 30 minutes, then drain thoroughly—any moisture may cause spoilage.

2. Sterilize the jar: Wash the glass jar with boiling water and let it air dry completely to prevent bacteria.

3. Make the brine: In a pot, combine vinegar and sugar. Heat gently, stirring until the sugar dissolves completely. Let the brine cool to room temperature.
