How to Make Shuijianbao: A Step-by-Step Guide

Shuijianbao, or pan-fried buns, are a beloved Chinese snack with a crispy bottom and juicy filling. Here’s a simple guide to making them at home.

Step 1: Prepare the Dough

Mix 300g all-purpose flour with 150ml warm water and a pinch of salt. Knead into a smooth dough, cover, and let it rest for 30 minutes.

Step 2: Make the Filling

Combine 200g ground pork (or chicken/tofu for a vegetarian option) with chopped cabbage, shiitake mushrooms, ginger, garlic, soy sauce, sesame oil, and a dash of white pepper. Mix well and refrigerate for 15 minutes.

Step 3: Shape the Buns

Divide the dough into small balls. Roll each into a thin circle, place a tablespoon of filling in the center, and pleat the edges to seal, ensuring no leaks.

Step 4: Cook the Buns

Heat 2 tbsp oil in a non-stick pan over medium heat. Arrange the buns seam-side up and fry for 2 minutes until golden. Add 100ml water, cover, and steam for 10-12 minutes until the dough is cooked. Uncover, increase heat slightly, and fry for another 2 minutes to crisp the bottom.

Step 5: Serve

Transfer to a plate, garnish with scallions, and enjoy with black vinegar or chili sauce. The buns should be tender, juicy, and perfectly crisp at the bottom!

This versatile recipe allows for fillings like beef, shrimp, or vegetables, making it a crowd-pleaser for any meal.
