How to Make Lotus Leaf Pancakes: A Simple Guide

Lotus leaf pancakes, or "he ye bing," are thin, flexible wrappers commonly used in Chinese cuisine to wrap ingredients like Peking duck or mu shu pork. Making them at home is easier than you think—follow this basic guide to create soft, pliable pancakes every time.

Ingredients:

- 2 cups all-purpose flour

- ¾ cup warm water (or more as needed)

- ½ tsp salt

- 1 tbsp vegetable oil (plus extra for greasing)

Steps:

1. Make the dough: In a large bowl, mix flour and salt. Gradually add warm water, stirring until a shaggy dough forms. Knead on a floured surface for 5–7 minutes until smooth. Cover and let rest for 30 minutes.

2. Divide and shape: Roll the dough into a log and cut into 8–10 equal pieces. Flatten each piece into a 3-inch disk. Brush one side with oil, stack disks, and let them rest for 10 minutes (this prevents sticking).

3. Cook the pancakes: Heat a non-stick skillet over medium-low heat. Carefully separate the disks and cook one by one. Place a disk in the dry skillet and cook for 1–2 minutes per side until lightly golden and puffed. Repeat for all disks.

Serving Tip: Serve warm with your favorite fillings. For extra tenderness, cover cooked pancakes with a damp cloth. Store leftovers in an airtight container for up to 2 days. Enjoy this versatile staple in homemade Asian dishes!
